Ingredients
- 300g sourdough, thickly sliced
- 8 medium tomatoes
- 250g cherry tomatoes on the vine
- 6 garlic cloves, unpeeled
- 1/4 cup (60ml) extra virgin olive oil, plus extra to drizzle
- Thinly sliced gorgonzola dolce (substitute other blue cheese) and basil leaves, to serve

Toss sourdough, tomatoes, garlic and oil in a baking dish and roast for 1 hour or until tomatoes are blistered. Scatter with gorgonzola and basil leaves, and drizzle with extra oil to serve.
